Fig is transformed into a cocktail in Yesterday Haze, a perfectly balanced combination that celebrates the dynamism of the fruity ingredient and its ability to operate across a number of contexts. Its fleshy pulp is intensified with the soft lullaby of slightly tangy cream, emphasising impressions of milk and sap. While tree bark, a raspy material, relates to the smell of sweet sassafras twigs, warm cinnamon quills, spicy cinchona bark, or even cedar - returning the fruit to its tree, and then the earth with iris. To round out this cocktail, a dash of walnut bitters adds a pronounced nuttiness that cuts through the creaminess. This is served straight up, and is garnished with a smoked fig leaf and a grating of warm tonka bean.
